The Bulgarian carrot, also called Shipka, originates from Bulgaria, and has smooth, root-shaped fruits with thick flesh that grow to about 7 to 9 cm long. They ripen from green to yellow in about 75 days and eventually turn bright orange. The plant can grow about 60 cm high and has white flowers. The fruits have a fruity, but also fairly sharp taste.
